Yields: 3-4 naan

Ingredients:

  • 1/2 tsp active dry yeast
  • 1/4 cup warm milk (about 105-115°F)
  • 1/2 tsp sugar
  • 1 cup all-purpose flour, plus more for dusting
  • 1/4 tsp salt
  • 1 Tbsp plain yogurt or buttermilk
  • 1/2 Tbsp vegetable oil or melted ghee, plus more for brushing
  • Optional for topping: melted butter or ghee, minced garlic, chopped cilantro

Instructions:

  1. Activate Yeast: Combine warm milk, yeast, and sugar. Let sit 5-10 min until foamy.
  2. Mix Dry: Whisk flour and salt in a bowl.
  3. Add Wet: Stir in yogurt and oil into the yeast mixture. Add to dry ingredients and mix until a shaggy dough forms.
  4. Knead: Knead on a floured surface for 8-10 min until smooth and elastic.
  5. First Rise: Lightly oil the bowl, place dough in, turn to coat. Cover and let rise in a warm place for 1-2 hours, until doubled.
  6. Divide & Shape: Punch down dough. Divide into 3-4 portions. Roll each into a thin oval or round. Keep covered.
  7. Cook: Heat a dry skillet (cast iron preferred) over medium-high heat. Lightly wet one side of a naan. Place wet-side down on hot skillet. Cook 1-2 min until bubbly and bottom is lightly browned.
  8. Blister (Optional): Flip skillet over a gas flame for 15-30 seconds to blister. Or, flip naan in skillet and cook other side 1-2 min.
  9. Finish: Brush warm naan with melted butter/ghee and optional toppings. Serve immediately.
